Easy-peasy Tuna Nicoise

Superfoods are brilliant but let’s face it, they can be pricey! So don’t ignore your healthy, hardworking storecupboard basics. Here’s a simple Tuna Nicoise recipe that’s perfect for a quick meal or packed lunch. And the beauty of it is, you can add or take away ingredients to suit your tastes. Mix it up, Frame-style!

Serves one – simply double for two
Ingredients
Half a can of tuna, drained
Two handfuls of mixed salad leaves
A small handful of green beans
One or two eggs, depending on how hungry you are
Dessert-spoonful of capers, drained and rinsed
Dressing (use as much or as little as you like)
Two tablespoons of olive oil
One tablespoon of white wine vinegar
Salt and pepper
A tiny pinch of mustard
Optional extras:
A couple of tinned anchovies
Two small boiled potatoes (perfect if you need a bit more energy)
A dessert-spoon of rinsed, pitted black olives
Grab a bowl and mix up the salad leaves, tuna and capers. Make the dressing. Boil the egg(s) for eight minutes and steam or boil the green beans for five minutes. Once the eggs are done, de-shell them and cut into quarters. Add the eggs and the beans (and any optional extras) to the salad and pour over the dressing.
