Healthy Veggie Burritos
Here’s a fab recipe for those of you who love healthy Mexican food. And yes healthy and Mexican go well together. Though I have to admit this version might not be the most authentic one out there. In fact I bet it’s almost as offensive to a Mexican as Fondue made with cheddar cheese is to me (cheese is serious business for us Swiss).
But I promise you this: You will love it, no matter where you come from.
Healthy Veggie Burritos
Makes 4 burritos (I ate 2 for dinner and 2 for lunch the next day. I’m a hungry girl.)
Ingredients:
For the black beans mix
- 1 can of black beans drained and rinsed
- 4 sliced mushrooms
- 1 chopped chili
- 3/4 chopped onion (or less.. I love onion)
- a few dashes of chili powder and cajun mix
- tiny bit of salt
- olive oil
For the guacamole
- 1 avocado
- ¼ chopped onion
- 1 chopped tomato (small cubes)
- dash of salt and pepper
- optional: lime juice
Additional ingredients
- grated cheese
- 4 whole wheat tortillas
- chopped lettuce
Directions:
Add black beans, mushrooms, chili and onion to frying pan that is lightly coated with olive oil. Stir and let it sizzle. Turn the heat to medium-low and let it cook until the mushrooms are well done and well combined with the other ingredients. Add spices.
In the meantime mash avocado in a bowl and add onion, tomato and spices. Set aside.
If you want your tortillas to be warm you can now heat them up in the oven for a few minutes. If you’re too hungry; skip this step.
Take one tortilla, spoon ¼ of the black bean mix onto it and sprinkle it with some grated cheese. Add a dollop of guac and add some chopped lettuce. Now comes the fun part: Wrap it so that nothing falls out when you eat it (easier said than done). As you can see from my photo; I’m far from being a tortilla folding pro. Some things take time to learn.
