Super Porridge

If you’re a traditionalist you might not like the following recipe. It’s a little bit crazy and a little bit different. It’s kind of like the cool younger sister of someone proper. It’s the indie chick of all porridges. (No idea where that just came from)

Anyway, it’s also chock full of nutritious goodness. And there’s only natural sugar involved (thanks to the banana and coconut)!

Super Porridge

Serves 1

Ingredients:

  • 1/3 c oats
  • 1 tbsp desiccated coconut
  • 1 tsp chia seeds
  • 1/2 sliced banana
  • 1 cup water or milk (or both)
  • 1 tbsp nut butter

Directions:

Combine all ingredients apart from nut butter in saucepan and bring to near boiling. Immediately reduce heat and let it simmer for a few minutes until it starts thickening. Do not forget to stir! Once desired consistency is reached serve with a dollop of nut butter that will then beautifully melt into the porridge.

This breakfast has a lot of substance and you won’t go hungry until lunchtime.
I think I don’t have to explain why I’m eating porridge in JULY. But despite all the rain, a good bowl of porridge is so comforting – it immediately makes me happy.

    My rainy day breaki is a steaming bowl of porridge made with water and cinimmon..with a hand full blue berrys, goji berrys and wheat germ sprinkled on top mmm

    Recently converted to *cold* gluten free porridge made only with coconut water and a few chopped nuts sprinkled in. Just leave it to soak for 10 mins. Seriously easy, dairy/gluten/microwave free, and surprisingly nice, especially with the pineapple flavour one…
