Baked Apple Porridge

Last weekend I sprained my ankle at a festival. Wellies & mud & drinks that certainly weren’t green juices = Twist and Shout!

So instead of feeling sorry for myself because I have to stay away from Frame for at least two whole weeks (booooh!) I have made it my mission to heal at lightning speed.

It’s all healthy food and lots of greens this side of the screen but naturally I also need a bit of comfort food.

I found this recipe the other day and since I’m on a porridge-roll anyway I instantly to give it a try. Good thing I did because it’s yummy, nourishing and can even turn the rainiest of days into a happy one.

Baked Apple Porridge (based on this recipe)

Ingredients (for four servings):

  • 2 cups raw oats
  • 1/4 cup brown sugar
  • 1/4 cup sunflower seeds
  • 1/4 cup desiccated coconut
  • 1 teaspoon baking powder
  • 1 and 1/2 cup milk (any kind)
  • 1 tablespoon coconut oil
  • 2 tablespoons butter
  • 2 medium eggs
  • 1,5 apples, sliced

Directions:

  • Preheat oven to 200C.
  • Combine all the ingredients except apples.
  • Pour into 8 X 8 greased casserole dish (or casserole dish you have on hand – I only found an oval one and it worked well).
  • Top with sliced apples.
  • Bake for 30 minutes or until center is cooked.
  • Let stand 5 minutes, slice, and serve.
